PB&J Sandwich Sugar Cookies!

Taken from Amy Atlas' "Picnic in the Park" chapter from her new book, a friend and I decided to make these PB&J sandwich cookies for a 4th of July BBQ.  




First, we popped by Michaels and purchased gingham and striped tissue paper and double stick tape (I already had a healthy amount of ribbon at home). We went with patriotic theme but you can pick any color combo you want for these adorable cookies.

Short on time, we took the book's suggestion of using pre-made Pillsbury sugar cookie dough from the refrigerated section of the local grocery store (HEB Montrose Market!). We basically followed the can's instructions, except we flattened each roll and cut it using Amy's bread template. You have to purchase her book to access the template, but if you just cut out an uneven heart shape on the top and square up the remaining borders then you'll be fine. 


Once the cookies cooled, we spread peanut butter on one side and jelly on the other, thus making our sandwich. Easy peasy. 

Now on to the crafting, we folded a border around the top of the tissue and then flipped the sheet over. Placing the top of the cookie just slightly above the edge of the ribbon, we folded the other half over, then each side, using double stick tape where necessary. Essentially, wrap and trim the paper like you're wrapping a gift. We then cut out strands of ribbon long enough to wrap around the cookies and placed double stick tape underneath each end so it closed in the back. Done!
